This is where things start to open up.

Coming from Pike Place, the difference shows up quickly, even in cold brew. The cocoa note is still there, but it’s lighter. It leans more toward cacao nib than cocoa powder. There’s a slight nuttiness too, closer to nut skin than roasted nuts.

The sweetness feels cleaner. Less toasted, less caramelized. It doesn’t sit heavy on the tongue. Instead, it feels more natural, more about the bean than the roast.

The mouthfeel is lighter and less embracing than Pike Place. It doesn’t coat the tongue as much. The cup feels smooth, clean, and more precise overall.

What really stands out is the finish. There’s a mild, fruity aftertaste that lingers longer. It’s subtle and restrained, but noticeably present after each sip.

This doesn’t try to impress by being loud. It’s quieter, but more expressive. Less about consistency, more about character. A good example of how Philippine Arabica can show nuance, even when brewed cold.
